Pork and Sayor Asin Soup


This dish is another favourite of mine. I enjoy it with a chilly dish or with chinchalok. If you enjoy soupy meat dishes, then you will love this Pork and sayor asin soup. For those who do not speak Malay, 'Sayor' means vegetable and 'Asin' is a denigration of the word 'Masin' which means salty.

600g pork ribs

Quarter of a small salted cabbage (sayur asin), sliced thickly

6 garlic, crushed

1 thumb-size ginger, crushed

1 tablespoon of black pepper, crushed

6 tablespoons light soy sauce

10 shitake mushrooms, stems removed and used whole (or whatever mushrooms you prefer)

1 teaspoon of oyster sauce

A few drops of sesame oil

1 teaspoon salt

Marinate the chopped up pork ribs with the pepper and light soy sauce and salt. Set aside.

Rinse the salted cabbage once and slice it. Set aside


Heat some lard oil (or vegetable oil) in a pot. Saute the garlic and ginger. Add the pork. Combine the fried ingredients with the pork and stir-fry for 5 minutes. Add 2 - 3 cups of water and the salted cabbage and boil on medium-low heat for 20 minutes. Then add the shitake mushrooms, oyster sauce and the sesame oil. Add a little more water if needed. Simmer on low heat for 10 minutes more. Add more salt if necessary (according to taste.)

Serve this pork soup dish with rice or noodles and

a side dish of chinchalok or sambal.
