Fried Chicken

Who does not love fried chicken and there are so many ways to prepare them. Here are two fried chicken recipes that I usually make for my family.

Soy sauce fried chicken

6 chicken wings or chicken parts

2 tablespoons dark soy sauce

1 tablespoon light soy sauce

1 teaspoon sesame oil

1 teaspoon oyster sauce

1 tablespoon white wine

1 teaspoon black ground pepper

1 tablespoon garlic, pounded to a paste

1 teaspoon ginger, pounded to a paste

1 teaspoon salt

1 - 2 tablespoons cornflour


Wash the chicken pieces. Put in a big bowl. Mix all the ingredients with the chicken except for the cornflour. Cover and leave in the fridge for half an hour or so to marinate. Turn about chicken in the marinate every 10 minutes.

Remove chicken from the fridge. Drain off any excess marinate into a bowl. Rub the cornflour over the chicken.


Heat sufficient oil to deep-fry the chicken in a wok or frying pan. When the oil is hot, gently slide the chicken pieces into the oil. Let chicken cook for 2 minutes and then turn it over and cook another 1 to 2 minutes. Remove chicken and allow to drain excess oil on kitchen absorbent paper. Be careful that the oil does not get too hot or your chicken pieces will be cooked on the outside but quite raw on the inside.



Spicy chicken wings



8 chicken wings

2 shallots, ground to a paste

3 garlic, ground to a paste

1 small (1 inch) piece ginger, grind to a paste

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 tablespoon chilli powder

1 teaspoon natural yogurt

1 teaspoon salt


Wash the chicken, pat dry and place in a bowl. Mix all the ingredients together . Cover and leave to marinate in the fridge for an hour.


Heat sufficient oil in a wok or frying pan and fry the chicken pieces. Turn them over after 2 minutes. Fry another 2 minutes. Remove and drain excess oil on kitchen absorbent paper.
