A light and delicious tea cake that is delicious. The sweet bananas and walnuts really give this cake such a wonderful taste.
150g sugar
113g butter, softened
2 large eggs, beaten
1 teaspoon vanilla extract
60g sour cream
3 bananas, peel skin and mash
1/2 cup walnuts, roasted and broken into smaller bits
180g cake flour
1/4 teaspoon salt
1 teaspoon baking soda
1 and half teaspoon baking powder
Cream the sugar and butter until light and fluffy (means it looks like it has increased in volume). Add the eggs , half portion and then the other half and beating well after each addition. Add the vanilla and sour cream. Whisk until combined. Scrape down the bowl now and then.
Sieve the flour, salt, baking soda and baking powder. Fold into the batter in two additions, adding the walnuts with the last addition of flour. Lastly add the mashed bananas and fold into the cake batter until well mixed.
Grease a 9x5x3 inch loaf tin and line with parchment paper. Grease the paper inside tin and lightly dust with four. Tap out excess flour.
Transfer the batter to the loaf tin. Cut a few slices of bananas and put over the top.
Bake in a hot 175 C for 45 to 50 minutes.
