I made this noodle dish using spaghetti instead of egg noodles and sausages instead of lupcheong Chinese sausage.

1/3 packet of spaghetti
10 shrimps, shell removed
3 sausages, sliced thinly
10 to 12 french beans, sliced on the slant
Half a carrot, julienne
8 garlic, pounded or finely chopped
2 red bird's eye chilli
1 tablespoon light soy sauce
1 tablespoon taucheo paste
1 teaspoon salt
Add 1 tablespoon soy sauce to the prawns. Set aside.
Cook the spaghetti in slightly salted boiling water for about 8 minutes. Strain and set aside.
Heat a little vegetable oil in a wok or skillet. Saute the garlic. Add the carrot and french beans. Season with half teaspoon salt. Stir fry for 2 minutes. Push to one side of the frying pan and stir fry the sausages for a minute or less. Add prawns, taucheo, chilli. Cook for 1 minute. Add the spaghetti and bring all ingredients together in the pan. Stir fry for 2 to 3 minutes until well combined. Taste and add more salt or light soy sauce if needed.
Note: This is a dish usually cooked on birthdays, something derived from Chinese culture. Leave the noodles long for long life. You can use lupcheong instead of pork or chicken sausages.
