Chilli Pork with fried potato chips

This is quick to cook and a very simple dish. You could substitute the belly pork with other meats too.



300g belly pork, cut off the skin and excess fat, slice meat into thin bite pieces


Put the pork in a bowl and add 3 tablespoons light soy sauce and half a teaspoon of salt


1 large onion, dice into small pieces

3 garlic and 1 inch ginger, pound together to a paste

2 tablespoons chilli powder (or chilli paste)

1 teaspoon sugar


2 or 3 potatoes (granola), peel skin and cut into chips


Fry the potatoes in hot oil till slightly browned. Set aside on absorbent paper.


Heat 4 tablespoons oil and saute the onions for 30 seconds. Add the ginger-garlic paste and stir-fry this for 30 to 40 seconds with the onions. Add the belly pork and mix, tossing about. Then add the chilli powder or paste and sugar. Quickly stir fry the pork and the sugar together. Add 150ml water so the ingredients do not burn or stick to the pan. Cover the pork in the pan and simmer over medium-low heat for 40 seconds to one minutes. Uncover and toss again. Put on a plate and serve with the potato chips.
