Corned Beef and potato stir-fry.

Eat with bread or tortilla wraps. Good for brunch or a quick light meal



1 tin Libby's Corned Beef 1 large onion, finely diced 3 garlic, crushed and finely chopped 2 big potatoes or 4 small ones, peel and cut into small cubes 1 carrot, skinned and cubed small 1 teaspoon salt 1 teaspoon black ground pepper 1 bird's eye chilli, finely diced

Add half teaspoon salt to potatoes and fry till browned. Set aside.

Heat a few tablespoons of oil in a skillet and saute the onion, garlic and chilli. Add the corned beef and half teaspoon salt and pepper. Stir fry for a bit. Add a little water and the carrots. Cook for 2 minutes stirring often. Add the potatoes. Mix well to combine and take off heat.
