A simple vegetable side-dish to go with any meat dish. You can choose to add the egg or leave it out.
A handful of french beans, cut on the slant about one inch length
1 square piece of taukwa, cut into slices
half of a carrot, julienne
3 garlic cloves, peel and chop finely
1 tablespoon light soy sauce
1 teaspoon oyster sauce
A few drops of sesame oil
1 teaspoon salt
1 egg, beaten in a bowl
Break off the stalk ends of the french beans and pull away the side stringy parts. Cut them into one inch lenths on the slant. Julienne carrots the same lenth too.
Beat the egg in a bowl with a pinch of salt.
Cut the taukwa into thin slices and then cut them again into squares. Sprinkle a little salt on them and fry in a little oil , just to slightly brown them. Set aside.
Heat about 2 tablespoons of oil in a skillet and saute the garlic for 20 seconds. Add the french beans and carrots. Season with half teaspoon of salt, soy sauce, oyster sauce and a few tablespoons of water. Toss a bit and cook for 2 minutes. Push ingredients to one side of the skillet pan. Pour in the beaten egg and scramble it. Mix with the rest of the vegetables. Return the taukwa to the skillet and mix with the other ingredients. Sprinkle with a few drops of sesame oil. Mix well and take off heat.
