Fried Fish with chilli Topping

The fish that may be used can be either sliced spanish mackeral, ray fish or smaller fish for individual portions as a whole.



12 to 16 dried chillies , soaked in warm water to soften it.

3 big onions or 15 smaller shallots, peel skin and slice

5 cloves of garlic, peel skin and slice

1 inch ginger, scrape skin off and slice

1 teaspoon shrimp paste

Half teaspoon turmeric powder

3 candlenuts, chopped

3 inches of lemongrass from the root end, slice thinly


Put the ingredients with quarter cup of water in a food processor to blend into a smooth paste.


6 ikan selar, salt and black ground pepper

Season the fish and fry. You can also choose to season fish with Light soy sauce.

Set aside.


Heat half a cup of oil in a skillet and cook the blended ingredients on medium high, stirring often.


1 teaspoon salt

3 tablespoon vinegar

2 tablespoons sugar


Cook the sambal ingredients for several minutes (5 to 7 minutes) until the oil rises. Add 1 cup water, the salt, Vinegar and sugar. Stir to mix well. Taste and adjust seasoning according to taste.


Spoon the sambal over the fish.
