This sambal recipe can be used for cooking squid or fish too.
2 big onions or 10 -15 shallots (depending on size)
4 garlic cloves
1 inch size ginger
Grind these ingredients to a semi-smooth paste.
1 tablespoon chilli powder
1 teaspooon turmeric power
1 teaspoon cumin powder
1 teaspoon salt
1 large or 2 smaller tomatoes, chopped up
1 teaspoon tamarind mixed in quarter cup of water
1 teaspoon sugar
500g prawns, slightly large, cleaned,
Heat about 3/4 cup oil in a frying pan or wok. Stir-fry the ground onion, garlic and ginger for 2 minutes until it is quite cooked. Add the spices: chilli, cumin and turmeric powders and the tomatoes. Mix all together and stir-fry for a minute. Add the prawns , salt, sugar and tamarind juice. Mix well all the ingredients and cook on medium low heat until the prawns is cooked. Add a little water if the liquid is drying up to prevent burning. Stir often.
Serve this prawn sambal dish with stews or soups to spice things up.
